Hygiene and Safe Food Practices in School Canteens during COVID-19

During the COVID-19 pandemic there has been a lot of uncertainty in Australia and around the world, resulting in everything coming to a standstill. With students returning to school full-time and canteens re-opening, it will be more important than ever to remain extra vigilant around hygiene and safe food handling measures to prevent contamination and illness.

Contamination of ready-to-eat food can occur as a result of pathogens from food handlers who do not practise good personal hygiene or have had a recent bout of gastroenteritis or some other form of infectious illness such as COVID-19.

Hygiene standards are not only to keep workers safe and healthy but to ensure the health and safety of the children they are serving and preparing food for. Hands need to be washed, with warm water and soap, thoroughly and regularly for a minimum of 20 seconds. Surfaces must be wiped down and disinfected and workers are under no circumstance to attend work if they are feeling ill or showing symptoms.

The recently released School Canteen Guide to Food Safety & Nutrition 2020/21 by Pro-Visual Publishing in conjunction with Food Standards Australia New Zealand (FSANZ), the Food Safety Information Council and the NSCA Foundation contains further safety and nutrition information for running school canteens.
